Chia seeds. Those tiny black seeds that have recently become a buzz word in the health food industry. So what is all the hype about? Are they really that much better for us than other seeds? Let’s take a look at the evidence.
It turns out that chia seeds really do pack a lot of nutrition into such a tiny food. A 2 Tbsp serve of chia seeds packs a whopping 10g of fibre, giving us around 1/3 of the adult recommended daily intake. They are also high in calcium (around 200mg/serve), magnesium (95mg/serve), protein (5g/serve) and omega 3 fatty acids. To top off their glowing health profile, chia seeds have recently been shown to contain significant levels of phytochemicals (antioxidants) which are necessary to prevent free radical damage in the body.
The bottom line? Chia seeds really are that good for us and probably deserve some of the hype they receive as “super foods”. Now on to one of my favourite ways of incorporating them into my diet: the Chocolate Coconut Chia Pudding.
This recipe is probably the most simple recipe I have posted, which by no means detracts from its value. This is a snack/dessert/midnight treat that I create at least a few times each week as it is so simple, healthy and satisfying. You won’t believe how much this pudding reminds you of traditional, fluffy chocolate mousse that is filled with cream, egg yolks and sugar. I love making a big batch of this on weekends and then spooning out small jars to take with me on busy days. It’s also an impressive dinner party dessert that takes 5 minutes to throw together the morning before, and will magically gel and solidify in your fridge throughout the day!
The best part about this simple recipe? It is totally customisable:
- Prefer almond/rice/soy/oat/cow milk? Use that.
- Off sweeteners? Use your favourite sugar replacement.
- Don’t like chocolate? Sub cacao powder for vanilla essence or cinnamon.
- And of course, top with your favourite fruits/chocolate/nuts etc.
Really the only things you are going to need are chia seeds (available in every major grocery store now – oh how the health food trend has spread!) and some form of liquid to soak your seeds. Let’s get started:
4 Ingredient Chocolate Coconut Chia Pudding
- 600ml coconut milk (just over 2 cups)
- 1/2 cup cacao powder
- 1/3 cup maple syrup (or your favourite sweetener)
- 1/2 cup chia seeds
- Fresh berries
- Finely chopped dark chocolate or cacao nibs
Takes , serves 4.
- In a large bowl, whisk coconut milk, cacao powder and maple syrup until the cacao is completely dissolved
- Add chia seeds and whisk to combine
- Pour into 4 glasses or ramekins and place in the fridge for at least 3 hours until firm
- Top with fresh berries, chopped chocolate or enjoy as is
